Recipe For Barbecued Javelina

(this is how my late wife used to fix the ones I shot)

4 to 6 pounds Javelina, pre-cooked and shredded (my wife cooked them in a pressure cooker)

½ cup oil

16 oz. Ketchup

½ cup molasses

¼ cup soy sauce

¼ cup honey

¼ cup prepared mustard

3 tablespoons vinegar

1 medium onion, minced very fine

1 jar orange marmalade (4 to 6 oz.)

2 teaspoons liquid smoke flavor

1 teaspoon garlic salt

1 teaspoon barbecue spice

1 to 2 dashes Tabasco Sauce

Mix all ingredients except the meat and set aside one hour. Place meat in a crock pot, pour 2 to 3 coups of barbecue sauce over the meat. Set crock pot on low and cook over night. Then ENJOY!

big secret to javelina is to not cut the scent gland on the back.

I believe it was a Meat Eater show where he showed how he cleans and skins the little unique animals to our Southwest.

I have shot a lot of 'em in past years ..

just pull the hide off. The gland comes off with the hide. No need to even worry about it.

Crock Pot is good if you can find one big enough. The largest I have found was for a Rhino. The elephant Crock pots are pretty scarce.

INGREDIENTS

1 medium size elephant
2 50 gallon containers of broth
500 lbs. assorted fresh vegetables, chopped
2 rabbits (optional)

DIRECTIONS

Cut elephant into bite-size pieces.
Using large kettles, simmer equal parts elephant and vegetables with enough broth to cover.
Cook for 3 1/2 days.
Feeds approximately 450 adults.
If more people are expected add the rabbits, but do this only if necessary as most people don't like to find hare in their stew.
