there. He cut strips about 2" wide and maybe 1/4" thick from the next of an Impala. He hung them on a bush outside of camp and let them sit in the sun for 2 or 3 days. He then wrapped them in a piece of newspaper and took them into his hut. I asked John, the PH, if they do anything else to it. He said normally they don't. It is not as dry as jerky as it hasn't been cooked. But the trackers and skinners sure liked it. In the gas stations on the way to camp there were bags of Biltong for sale, but I never tried it.
If you would sell off some of those guns in your safe you could go to Africa with us and try some. We are hoping the virus crap will have run it's course by late summer and we can plan on our hunt again. Right now we have one opening as one of our guys can't change the dates at his job. So if all goes well we will have one opening. Whoever takes that spot can just pay my guy for the deposit he paid in and take his place. More on that as we go along.
