It simply reduces the trigger return pressure that must first be overcome to begin a pull. The other portion of the "Job" pushing forward on the hammer to increase friction on the sear works also. It's basically a form of honing the surfaces.

I like to polish the cross pins and the holes they slide through, sides of moving parts. It all adds up to a very positive sum. Stoning sear and hammer notch angles is something to leave to a professional. As is installing a free-spin pawl and re-timing. A total job can really transform the shootability overall.
