beef you will love Yak. Brent Clark was just in here and he is going to the HHC for a yak and he asked the same questions. Bison is a drier meat that you will need to baste and keep moist as you are cooking it or it tends to turn into jerky. Yak, Water Buffalo, and Watusi are all closer to a cow as far as the meat is concerned. I have shot 3 or 4 of each of them and the water buffalo and Yak are, to me, the best meat.

Water buffalo I have had and it’s really good. I even was given almost half of a Spanish fighting bull. That was some amazing meat too.
I was at a ranch where a cross Yak N Buffalo was taken, but never ask the guy how it was.

Agree yak is better than bison
