HHC animals

The question about the Yak got me thinking about exotics. So to the guys attending the HHC, how will you prepare your animals? Example: I always have my Aoudad made into breakfast sausage. Corsican was chops steaks a burgers. Axis was all kinds of stuff. Bovines just like beef cuts.
I won’t go into ways of cooking, but I really enjoy wild game.
