I usually install the flat mainspring housing. Other than that I like 'em the way they were made.

I cannot imagine a serious gun man not liking the 1911. although feature wise it is very subjective. I much prefer the older 1911 compared to the 1911A1 of WWII fame. I also prefer the full size Govt. model.
Some features I find commendable; flat mainspring housings, s bit of a beavertail on the grip safety (a 1911A1 feature), and extended slide releases. The advent of "good" alloy frames make a fantastic lightweight Govt. model. I'm a bit skeptical of them lasting in the long run however. In my personal collection of 1911 I find AMT, Gov./Essex?Reeder Custom, SIG, Auto Ordinance, and Springfield Armory. All but one of the full size Govt. models are .45 ACP.

The idea of owning only a single semiauto handgun is so terrible I shiver to contemplate it, but if I had to this is where I'd go.

I need a pistol. Usually it is a Glock 19 9mm the older I get. I still prefer the Mod 70 Springfield Armory GI model 45 that Kase did a complete rework on. Small but heavy enough to absorb some of the recoil.
