I got the crock pot warming up...
The other day I set a cage trap at our trout pond for beaver. Needless to say I did not catch a beaver but I did catch a large male muskrat.
So I skinned him out and put the meat in a stainless steel bowl with Mom's marinade. Mom used this homemade marinade of sorts to draw out any odd flavors from any kind of meat.
Cold water
1/4 cup of white vinegar
tablespoon of salt.
Two or three cloves of fresh garlic, crushed.
Three to four bay leaves
Teaspoon of crushed peppercorns. I cheated and used regular ground pepper.
I added some juniper berries as well.
Let the meat soak overnight and then drain.
I am now going to put the whole muskrat into the crock pot and cook it in water with some herbs and a touch of pink salt.
Then I will bone it out and use it for something like a chili or stew.
