made tamales in years but that's what I used also! I like a good pork steak and country style ribs as well. So when they went on sale, I'd cut a bunch of them up the way I wanted, and make sausage out of the ugly pieces.
My wife made 10 dozen tamales one day ...

For some reason she got really really angry with me. I had to go out to the barn and work in my reloading room for several hours before it was safe to come back into the house!
