our chickens are producing pretty well. This is about 6 days worth. We have run out of egg cartons. And I am figuring out all the different ways to fix eggs.

7 of the hens are older ... 17 are young and have been laying only about 4 months. They are quite prolific at it.

lime water for months and keep fresh. Search it if it helps. They have to be unwashed though. The calcium fills the porous shell voids. Sort of canning for eggs.

I will make a pickling solution with either white or apple cider vinegar and add whatever seasoning I happen to have. One trick I do is to add beet root powder so that the eggs turn red.
I know it isn't for everyone, but they are good over a salad.
