Would the new Colt Python be able to be rechambered to .356 GNR or is the S&W 686 a better candidate?
The 686 in a 5 shot conversion would be the better of

the two but even then you would have to watch your loads. The 356 GNR is a 41 Magnum necked down to 357 and the top end loads would have to be handled carefully.
If this helps...think of it as a .357 Maximum

in a normal length frame. My .356 GNR loads are basically the same charge I'd typically load for my .357 Max. using 4227 or AA1680. I have gotten great results with 4227, it's as fast as H110 or 296 without the fuss. I worked up to that level watching for case set back. On a DA revolver you are ejecting all (6) at the same time, so any sticky conditions are multiplied compared to a SA.
It's probably the easiest GNR round to get into on the ground floor. You can load it up, down, or in the middle. Lot's of fun. Me personally, I'd not want anything lighter than a Blackhawk or N-frame S&W. An old unloved TC barrel in common .357 Magnum is a good candidate too and REALLY boosts the performance.
I will probably stick with the Blackhawk

And leave the S&W for the standard rounds. Still not sure on which version. I have always wanted a Black Widow since I saw the first one in Guns Magazine way back when
I'm not a good gauge but this is mine...

Not many have both Sasquatch AND Nessie (other side) engraved on their custom guns! My gun was a convertible so the extra cylinders. A bit silly expense since I seldom use the extra cylinders but I HAVE them if I want them. I can shoot lots of different rounds! It's drilled and tapped for scope as well.
