I made a batch of wild turkey sausage meat. I did not bother to put them in casings as it is a pain to tear apart the grinder to prep and clean as well as I don't have any on hand.

I took wild turkey breast and thighs, ground up the meat with a mixture of cut and peeled apples along with cooked oatmeal as a filler. I just used poultry seasoning, sea salt and some garlic and onion powder. I more or less eyeball measured the batch.

I made patties and put them in freezer bags. The batch you see here are made into meatballs. I plan to try one out fresh from the oven.

Not a bad way to take care of wild turkey. Sometimes I just don't care for wild turkey cooked up in a traditional manner like Thanksgiving. No sin in creativity.

With all of the hunting seasons more or less gone I am in a way looking forward to late April and the month of May when I will try to take a couple birds with Dad's shotgun and my Barnett Crossbow.
