was one of the most important foodstuffs for people. I participated in a professional development on the history of the oyster. It was really fascinating. Often we do not think much of an oyster but two hundred years ago it was the "Big Mac" of the day. If you went out for lunch while at work most likely you would have a serving of ale and oysters.

In fact one of the first environmental lawsuits was over the issue of pollution and the oyster beds in Long Island Sound in the mid to late 1800's.

I love them raw. A touch of hot sauce of wasabi and slurp it down. In the past, people would prefer them to be boiled or fried.
