I have a Wlther PPK in Stainless steel with a laser attached that is really nice but it is getting hard to rack the slide and pinching my fingers in the bargain. I wear gloves most times but I think of replacing the recoil spring with a softer one, but I do not want to affect the slide operation. What should I be looking for in a replacement spring?

Remember that the PPK is direct blowback

The PPK is direct blowback and relies on both the weight of the slide and the strength of the recoil spring to resist opening too soon. I would not go with a lighter recoil spring if it were me. A locked breech 380 would eliminate that problem and be easier to operate...

My 2 cents...
