10 to 12 degrees is too thin, it would take hours to achieve a burr. Try a Lansky or a Ruixin Pro. It is easy to establish and maintain the correct angle with either of these systems. Maintaining a 17 to 20 degree angle by hand using a diamond or Arkansas bench stone takes years of practice.
